Grilled Chicken Margherita

Serves 4 people
Ingredients
- Four chicken breasts (pounded to 1 inch thickness)
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon spices (dried basil, thyme, and or oregano)
- Four large slices fresh mozzarella cheese
- ½ cup basil pesto
- Handful of cherry tomatoes (halved)
- 1 tablespoon lemon juice
- ½ cup packed fresh basil leaves
Preparation
- In a large bowl add chicken, salt, pepper, olive oil garlic powder, and spices. Toss to thoroughly coat the chicken.
- Grill chicken over medium heat for 6-8 minutes on each side or until cooked through. Top each piece of chicken with a slice of mozzarella and cook for approximately another minute until melted.
- Toss lemon juice, basil, and tomatoes together in medium bowl.
- Place chicken on plates and top with about 3 tablespoons pesto, a scoop of the tomato basil mixture, and some black pepper and salt to taste. Serve Immediately.
