Grilled Chicken Margherita

Serves 4 people


  • Four chicken breasts (pounded to 1 inch thickness)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon spices (dried basil, thyme, and or oregano) 
  • Four large slices fresh mozzarella cheese
  • ½ cup basil pesto 
  • Handful of cherry tomatoes (halved) 
  • 1 tablespoon lemon juice
  • ½ cup packed fresh basil leaves



  • In a large bowl add chicken, salt, pepper, olive oil garlic powder, and spices. Toss to thoroughly coat the chicken.
  • Grill chicken over medium heat for 6-8 minutes on each side or until cooked through. Top each piece of chicken with a slice of mozzarella and cook for approximately another minute until melted.
  • Toss lemon juice, basil, and tomatoes together in medium bowl.
  • Place chicken on plates and top with about 3 tablespoons pesto, a scoop of the tomato basil mixture, and some black pepper and salt to taste. Serve Immediately.
